Café Opening and Closing Kitchen Checklists with Clear Handoffs

A café opening checklist confirms the kitchen is ready for today's service; a closing checklist leaves verified food status and working conditions for tomorrow. Keep the two lists separate and assign ownership so staff do not assume another person completed a shared task.

Opening: verify before the rush

  • Review the previous shift's unresolved items and confirm who will resolve them.
  • Check cold storage and required monitoring records using the approved method.
  • Confirm handwashing facilities and supplies are ready.
  • Inspect prepared-food identities, dates and container condition.
  • Check clean equipment and surfaces, then set prep quantities from expected demand and usable stock.

Record actual findings and actions. Do not pre-sign checks to save time later.

Closing: leave facts the next shift can use

Review remaining ingredients and prepared foods under the approved retention or disposal procedure. Preserve original dates and batch links on food that remains. Complete required equipment and surface cleaning and sanitizing rather than treating a quick wipe as the whole process.

Restock routine supplies where appropriate and report equipment faults. Keep any food affected by an unresolved safety concern under the designated corrective-action process.

Use a concise handover record

For each open issue, record the item or equipment, verified status, action already taken, next action, responsible role and deadline. The incoming employee should not need to call the closer simply to understand the note.

Example: a partially used sandwich filling

The closer confirms its identity and approved date status and documents the authorized storage or disposition decision. “Filling left in fridge” does not tell the next shift enough to use it responsibly.

Review tasks reopened by the morning team and recurring closing exceptions. If a job is repeatedly missed, inspect its timing, supplies and ownership instead of adding another box to the list. Customize both checklists to the café's menu and approved food-safety plan.
