School Cafeteria Storage: A Daily Service Checklist
Share
A school cafeteria storage checklist should cover receiving, pre-service selection and closing. Adapt it to each campus's equipment and district procedures so staff know what to inspect and what to do when a check fails.
At receiving and storage
- Check incoming food under the approved receiving procedure.
- Move accepted stock into its designated storage zone.
- Keep received ingredients distinguishable from prepared food.
- Confirm food separation, readable identities and required date information.
- Complete required equipment and food-temperature checks.
Before the serving line opens
Review prepared components against the day's menu and batch records. Keep current recipe and allergen information accessible to authorized staff. A delivery arriving during lunch should not displace the labels or records of food already prepared.
At close
Record food removed, retained under approved procedures or discarded. Note equipment exceptions and any stock awaiting a decision. Give every unresolved item an owner; a checked box does not resolve a problem.
Make the checklist campus-specific
Use location names employees recognize and identify who covers each check when the usual employee is absent. Review missing or failed checks weekly. If the same task is repeatedly missed, inspect its timing and accessibility before simply adding another signature field.
Safety and regulatory considerations
School foodservice procedures should align with the district's approved food-safety system, applicable local requirements and accommodation plans. Food allergy controls require both staff training and prevention of cross-contact. The FDA Food Code is model guidance; applicable laws and institutional policies may differ.
