Teach FIFO Food Rotation to Grocery Deli Staff
Share
Teach FIFO by having employees select and replenish actual deli stock under supervision. They should explain why a lot is eligible for use before deciding which eligible lot goes first.
Demonstrate one complete stock movement
- Identify the product and distinguish recipe variations.
- Read the receiving, opening and discard information required by policy.
- Exclude damaged, unverified or otherwise ineligible stock.
- Select the appropriate eligible lot and place incoming stock in its assigned position.
- Carry the required identity and date information forward when a package is opened or divided.
Practice with three situations
Use two same-product cases with different dates, an opened container and an item with an unreadable label. Ask the trainee to show what they would use, where new stock belongs and which item needs escalation. Do not let shelf position answer the question for them.
Clarify what FIFO does not decide
First in, first out is a stock-ordering method. Where approved procedures prioritize an earlier applicable use limit, staff must follow that rule. Being the oldest never makes an unsafe or unidentified item usable.
Check performance after training
Observe ten replenishment decisions across different shifts. Record errors by cause: date interpretation, shelf placement, missing labels or failure to escalate. Correct the specific task and repeat it; attendance at a briefing alone does not show competence.
Safety and compliance
Check time and temperature controls, cleaning and allergen procedures against the business's approved food-safety plan. Operational labels and checklists are support tools, not safety guarantees.
