Hotel Breakfast Prep: An Opening and Closing Checklist
Share
Prepare hotel breakfast with a written evening handover and a short opening checklist. The early team should be able to distinguish ready components from unfinished work without relying on someone who has left.
The evening before
Use expected breakfast covers and recent demand to set provisional production quantities. List prepared components, their storage locations and batch references. Identify work that must happen in the morning, with an owner and target completion time.
Before guests arrive
- Review unresolved issues from the previous shift.
- Complete equipment, holding and sanitation checks required by the food-safety plan.
- Verify food identities, date information and recipe or allergen changes.
- Assign hot-food, cold-food and replenishment responsibilities.
- Confirm the first production run and the next demand review.
Make the 5 a.m. handover useful
“Breakfast ready” is too vague. A useful note identifies the prepared item and location, what remains unfinished and the check still required before service. Keep outstanding work visible until the receiving employee acknowledges it.
Close the loop after breakfast
Record quantities used and discarded, late opening tasks and avoidable rework. Adjust tomorrow's plan using comparable demand. Handle leftovers under approved procedures rather than assuming they can be included in the next day's breakfast.
Safety and compliance
Check time and temperature controls, cleaning and allergen procedures against the business's approved food-safety plan. Operational labels and checklists are support tools, not safety guarantees.
