Food Truck Opening and Closing Checklists with Clear Food Decisions

A food truck opening checklist should confirm the truck is ready to prepare and serve food. The closing checklist should account for remaining food, complete required cleaning and leave a clear overnight handoff. Assign each task and record what happens when it cannot be completed.

Opening: verify the truck's current condition

  • Inspect required equipment and complete approved holding and storage checks.
  • Confirm food-preparation surfaces and tools are ready under the cleaning and sanitizing procedure.
  • Verify handwashing access and required supplies.
  • Check ingredient identity, relevant dates and container protection.
  • Review unresolved closing issues before using affected equipment or food.

Use actual observations; do not carry forward yesterday's sign-off as today's result.

Closing: decide food status before cleaning around it

The authorized person applies approved retention or disposal instructions using the food's actual history. Keep identity, original dates and batch references with food retained appropriately. Record rejected or uncertain items and follow the corrective-action process rather than making them appear current with a replacement label.

Finish the cleaning and restocking sequence

Complete the required equipment and surface cleaning and sanitizing procedures, including the manufacturer's instructions where applicable. A wipe-down alone is not evidence that the full process was performed.

Record supplies to replenish, container damage and equipment faults. Confirm the approved overnight storage arrangement and who is responsible for any required monitoring.

Example: a damaged lid at close

The closer notices a lid is damaged and follows the approved assessment and disposition process. They record the decision and any replacement needed before the next service, rather than leaving a vague note that another employee must interpret.

Make the handover actionable

Use item, verified status, action taken, next action, owner and verification fields. Review unresolved closing items and next-day delays after each operating period. Repeated reopened tasks may indicate insufficient time or unclear responsibility, not simply a need for more checklist boxes.
