Corporate Dining FIFO: Rotate Stock and Track Transfers

Use FIFO to organize eligible corporate dining stock, while preserving lot identity and the applicable rules for opened or prepared food. An older receipt should not be selected until its status is verified.

Make receiving and shelf placement consistent

Use common item names and units. Check incoming stock, retain relevant lot information and place it in the assigned rotation position. Leave labels visible so employees can verify the selection rather than trust where a case happens to sit.

Handle opened stock separately

  • Apply the approved opening and date-marking procedure.
  • Retain the source reference when splitting a package.
  • Keep recipe variants distinct.
  • Review prepared and opened containers as well as unopened cases.

Example: a midweek salad delivery

Before putting new ingredients away, check older stock for eligibility and arrange it in the required use order. Record quantities sent to the salad station. Bringing a partially used container back must not erase its opening history.

Reconcile waste and station movement

Track disposal causes and transfers separately from consumption. Review skipped eligible stock during observations and compare disposal with meal volume. Repeated errors may call for a shelf or label change. FIFO never extends allowable storage or resolves an uncertain handling record.

Relevant guidance

These examples are operating practices rather than universal legal requirements. Event and cafeteria operators should follow adopted local food codes, approved food-safety programs and the appropriate temperature and allergen controls.
