Closing-Shift Food Label Checks: Leave a Clear Handoff

Close each station with identifiable food, clearly resolved label problems and obsolete labels removed from reusable containers. Give the opener a specific record of any permitted outstanding action.

Close stations as work is completed

The check works best when it happens as employees finish individual stations rather than as a frantic final task. Include one person who can make decisions about questionable food and one clear place to document exceptions.

Check stock, transfers and empty containers

  1. Confirm every stored ingredient is identifiable and has all marking required by the approved procedure.
  2. Inspect containers transferred during service for labels that were damaged or separated from the batch.
  3. Review products due for use, disposal or special handling under the current SOP.
  4. Check empty washed containers for obsolete labels before they re-enter clean storage.
  5. Log unresolved questions and notify the opening lead with specific item, location and required action.

Resolve sauce and garnish status before leaving

A kitchen closes with a half-used pan of garnish and a freshly prepared sauce. The closer verifies the approved date information on the sauce and checks whether the garnish can be retained under the operation's rules. An unlabeled tub is not quietly put into tomorrow's cooler; the person in charge resolves its status before departure.

Never borrow dates from a neighboring tub

Avoid 'fixing' unclear dates by copying information from a neighboring container. When origin or required handling cannot be verified, the manager must follow the appropriate disposition procedure.

Leave an actionable note for the opener

A useful handoff identifies the exact item, shelf position, observed issue, manager decision and any remaining authorized action. “Check sauces” leaves the opener searching. “Sauce rack B2: see resolved exception entry 14; replenish label roll before prep” points to a specific task without inventing a new food history.

Frequently asked questions

Can closing checks replace opening checks?

No. Each shift sees different risks and conditions. Short checks at both handoffs can serve different purposes.

Should used containers keep old labels through washing?

Follow the tested removal and cleaning SOP so obsolete identification is not carried into the next use.
